Elgin: Where Cool Elegance Begins

Elgin, often referred to as the “cool-climate capital” of South Africa, is where we grow grapes for our Chardonnay—most notably Emerald. The region's high elevation, coastal breezes, and long ripening periods result in wines with finesse, tension, and balance. Here, mornings are misty, afternoons bright, and evenings cool—perfect for preserving acidity and developing layered complexity.

In the glass, Emerald reflects its origins with crisp green apple, lemon curd, and a flinty minerality. It’s a wine of purity, echoing the clarity of the Elgin air and the precision with which the vines are tended. This is not just Chardonnay—it’s a portrait of place.

Tulbagh: Rugged Beauty, Bold Character

Just beyond the Witzenberg Mountains lies Tulbagh, a valley of stark beauty and ancient soils. The terrain here is dramatic, defined by rocky outcrops and wind-shaped slopes. It's in Tulbagh that we cultivate the grapes for our boldest wines, including Union and Marathon.

The terroir imparts structure and strength. Days are hot, nights are cool, and the stress on the vines produces fruit with intensity and depth. In Union, you’ll find dark berries, tobacco leaf, and an earthy undertone that speaks of the valley's wildness. Marathon, our flagship red, offers a deeper dive into Tulbagh’s power—with black cherry, spice, and a touch of graphite. These wines are assertive yet elegant, revealing the raw soul of the land.

Franschhoek: Home, Heritage, and Harmony

Franschhoek is more than a location—it’s Paserene’s home. While the grapes may come from across the Cape, it’s here that they are brought to life. Our tasting lounge, cellar, and vineyards lie in a valley rich with heritage and framed by dramatic mountains.

The Franschhoek terroir adds its own magic. Soils vary from granite to sandstone, and the moderate climate allows for a harmonious ripening season. Wines like Rosie, our celebrated rosé, capture the light, floral qualities that reflect this peaceful valley.
